Before diagnosis Whitey's healthy weight was 10 lbs. 3 years since diagnosis he is down to 7 lbs. He is getting older ( vet estimates he's 14). He has been 7 lbs for his last 2 annuals. So his weight is stable but I still think he needs to put weight on to be healthier. He lives on Fancy Feast classic and he does have a decent appetite. Is there anything I can feed him that can help put some weight on without spiking his blood sugar too much?

You might try more frequent meals with maybe an extra tablespoon worth thrown in. Mini-meals won't stuff him, while allowing more calories to be consumed.

Also, for cats, calories per gram are:
    3.5 protein
    8.5 fat
    3.5 carbohydrate

A slightly higher fat food may help add weight - take a look ar the Wenness brands, for example.
