I am no expert but...
While there are low-carb (but not zero-carb) kibbles, you don't want to do anything that might endanger your cat's hard-won remission. Like JanetNJ says, you shouldn't take any chances.
If you are just looking for some variety, try the Flaked versions of Fancy Feast, which are almost as low-carb as the Classic patés. There are also high-quality, low-carb foods with chunks of meat in a broth, like some varieties of Tiki Cat.
If you are after something to use as a snack, Orijin, for example, makes treats that are just freeze-dried meat and so fine for a diabetic cat.
Sneaking in even a bit of dry might re-awaken that kibble-monster still lurking just below the surface. With your cat then going on a hunger strike for crunchy food. I've been there.
All that said, there are two decent low-carb kibbles -- Young Again Zero and Dr Elsey's cleanProtein Chicken. Do not try the "prescription" dry foods for diabetics. Sad to say, they are not low-carb and they aren't made with quality ingredients.
