Our cat Grady was diagnosed about 5 weeks ago. Weight loss and drinking/urinating excessively were his symptoms. He is on 3 units of Lantus twice a day and we have had no difficulty with the shots. We have done 2 glucose curves (using a vet glucogauge) at home since his diagnosis, which has resulted in the dose increase. His next one will be next week. He is on low carb wet food. Since starting the insulin he has developed some diabetic neuropathy in his hind legs. The vet assures me this will resolve once he is regulated and was not receptive to the B vitamin supplement I have seen recommended. Although he seems a little perkier since starting the insulin, the neuropathy issue is concerning because he struggles to jump up on things as well as go up the stairs. I am hopeful he gets regulated soon and we start seeing a marked improvement in his overall health.

It is good that yo are feed low-carb canned food and are home testing BG.
Most of us here test our cat's blood glucose at home using a human meter. We test before each shot and periodically between shots. We record our reading and other info in a spreadsheet. See:

You don't need your vets permission to give the vitamin B 12 tablets for neuropathy.
Zobaline tablets for cats is very good. I used it for my cat.

To be safe it is best to test before each insulin shot to ensure it is a safe number to shoot then test about +5 or +6 hours after the shot to see how low it gets. It can vary day to day so a weekly curve is not as good as daily testing.
3 units is a lot of insulin for a cat who has only been on it 5 weeks.
We use the lowest number the cat drops to, to work out the dose needed.
