It was not easy for us to transition to wet food either. I had to try MANY different kinds before finding any they would eat at all. Then, they would decide they did not like one they seemed to like for a day or two. So, back to the drawing board. I found that adding home cooked bone broth and chicken breast meat to their meals helped. Also, for Mia, I had to add kibbles (either crushed or whole) on top of her wet food for months until I could get her to eat without it. I just made sure I had low-carb dry food. I think the texture difference is the biggest hurdle to get over.
I have been feeding my girls Weruva Chicken Frick A' Zee for several months now. When I first introduced it to them, they would not eat it. They would only eat Fancy Feast Classic Chicken pate and Sheba Perfect Portions chicken pate in the beginning. Once they were used to wet food, I re-introduced the Weruva, and they have eaten it ever since. Again, I think the texture was the problem in the beginning. Dr P recommends "start with protein minimum of 40, fat maximum of 50, carb max of 10, and for cats with kidney issues....phos less than 300."
