Food switch questions and Menadione Sodium Bisulfate ???

Hello all,
Can someone explain the difference in the carb/protein values on an as fed basis vs. dry matter basis?
I currently feed TIKI Cat which is said to have 16% protein on an as fed basis and 81% on a dry matter basis.
Thinking of switching foods so I’m researching the Tiny Tiger brand from chewy. The chicken pate says 45.45% protein on a dry matter basis and back of can says 11% protein which I assume is the as fed %? CARBS for this food state 2.3% as fed and 10.45 % on dry matter basis. (Yes I’ve combed through Dr Piersons food chart and tried some FF varieties)
Would you think I could expect a big difference in BG #s if I made this kind of switch?
Which numbers should I pay attention to when researching foods? The As Fed #s or the Dry matter #s??
The original reason I was thinking of switching is to maybe switch up the protein source since my girls BG #s are still wonky. However I just learned the TIKI cat brand contains MENADIONE SODIUM BISULFATE (synthetic vitamin K) and everything I’m reading about that is NOT good.
Does anyone have any info to add about that menadione sodium ? After reading about it I’m feeling like a bad cat mom for feeding her a food with that in it. Here I was spending a lot of $$ on what I thought was the best- highest protein cat food only to find is has what appears to be something junky in it!!

The only difference is the Zobaline has 200 mcgs of folic acid
So I buy the folic acid at the supermarket and crush it up and add it to the B-12
If you can't find the 200 mcg get the 400 mcg and cut it in half and crush it up

Has no taste, no need to crush it up

I Googled it and go similar articles but none really provided any evidence that it is bad. The following article seems to be scientifically based and concludes not problem.
