Another Lemon start today, but we are already surfing at the beach so I'm into it.

The kids are being major soft cuties this weekend, I have proof!

Hope everyone is having a great weekend and that my co-Canadians have already got their turkeys! I'm going to try making a pumpkin pie for the first time this weekend... does anyone have any tips? my family usually does apple crisp or apple pie so I'm a little nervous to try pumpkin for the first time

Wish I could help on the pie but I can't make a pie crust to save my life! I'm fine with choux paste for cream puffs and éclairs but not pie crust. Go figure Good luck. I'm sure your pie will be absolutely scrumptious! Happy Thanksgiving! :D
 
So that's what record players are good for now. :p Lagoon beckons Mowgli.

We use butter for the crust. Make the dough, do not overbeat, mix by hand is best. Let it chill a couple hours in the fridge before rolling it out. The pie recipe on the back of the pumpkin can is usually pretty good, but a bit generous on the milk. It usually takes longer to cook to set, so you are in danger of the crust getting dark. Either reduce the liquid a touch, or put foil over the crust once it is cooked as you want. Brown sugar instead of white, grated fresh nutmeg and lots of cinnamon of course. DH did the honours last night. Dinner is today. :) Good luck.
 
Hmmm! Maybe I didn't chill the dough long enough. It was the rolling and transferring it to the pie pan where I hit the wall! Thanks for the tip Wendy!

You know, my mom is the same way, she doesn't mind baking ANYTHING but when it comes to pie crust it just never works out for her! Happy Thanksgiving!!

Yeah, the air turns a little blue when DH does that too. :p Dust the roller with flour, and I have a long flat pie lift blade that helps clear the dough off the surface.
Wendy, are you really into baking? I have to ask now since you have a 'long flat pie lift' blade :)
 
Oh, you lucky person to have two such beautiful black beauties! I yearn for a black one, but the rescue angels who guide me haven't seen fit to give me an indoor one yet. Two black strays sequentially came to my back yard for a few years, which was such a joy, but neither wanted to be indoors, and both are gone now.

Theyre awesome and I hope some day that you can have a beautiful black kitty to add to your indoor family :) Ugh the heartbreak of outdoor cats and the uncertainty of what happens to them when they dont come back... I always choose to believe that they found another family :)

Cant wait for Thanksgiving! Im already a little unsure of how my pie crust is going to turn out but lets see :)
 
Your furbabies are gorgeous!!! I hope you pumpkin pie turns out fab! I made this today - it's apple with a pecan bottom layer...best apple pie recipe I've ever made...at least per DH's standards :)

Let me know if you want the recipes - I use one for crust, another for the pie filling.

Oooooh...Mel's is sliding in response to your Thanksgiving festivities...I swear these cats have a special type of cat-dar that dials in to when you're really busy or planning something special...it's kinda like radar...only the cat version....Luci usually pulls that one one me when I have big plans...so I've stopped having any big plans...LOL! :p

I'm no good at pie crust. I buy ready made crusts and I do the filling.

Well there seems to be a little less filling than you probably wanted but man that is one gorgeous and very impressive pie crust so don't sweat it. You'll have everyone oohing and aaaaaaaaaaaaahhing over the crust and they will never notice. Add lots of whip cream! . It looks yummy!

I used to work with a cool guy from Australia! He brought us cookies on Anzac Day and treated us to a nice pavlova once, loved it! He quit recently and built a camper van, he’s travelling around North America

No we don't have a thanksgiving day type of holiday here.

We use butter for the crust. Make the dough, do not overbeat, mix by hand is best. Let it chill a couple hours in the fridge before rolling it out. The pie recipe on the back of the pumpkin can is usually pretty good, but a bit generous on the milk.
Spread the pumkpin out on a foil wrapped cookie sheet. Press paper towels on top to suck out some of the moisture ten stick it in a hot oven for 10 minutes or so. Draws out more moisture and gives it a bit of a roasted favour. Replace 1/4cup of the milk with 1/4 cup Irish whiskey. Add an ounce of whiskey to the whipped cream. And yes, fresh nutmeg is so important.

We’ll need a pie report tomorrow. Hope it tastes as gorgeous as it looks. Forgot to mention DH used pastry flour, the crust almost tasted like shortbread. :)

As per Kel’s modification above, I have seen brandy as an alternative. If you start with a fresh pumpkin and roast it, you also get that yummy roasted taste.
